Ingredients

For the Blueberry Syrup: 250 g blueberries, 90 g granulated sugar

For the Cream: 200 g cream cheese, 250 g mascarpone, 24 g whipped cream stabilizer, 50 g powdered sugar, 8 g vanilla sugar, 500 ml heavy cream, 75 g blueberry syrup

For the Filling: Maria biscuits, Milk

For the Topping: 50 ml heavy cream, 100 g white chocolate, Blueberry syrup


Instructions

  1. Step 1: Prepare the Blueberry Syrup: In a pan, heat blueberries and granulated sugar, bringing to a boil for 7-10 minutes. Strain the mixture and store the syrup in a piping bag.
  2. Step 2: Make the Cream Filling: Beat cream cheese, mascarpone, whipped cream stabilizer, powdered sugar, and vanilla sugar together until smooth. Gradually add heavy cream and mix until firm.
  3. Step 3: Add Blueberry Syrup to the Cream: Fold 75 g of blueberry syrup into one-third of the cream, and transfer to a piping bag.
  4. Step 4: Assemble the Pie: Layer Maria biscuits dipped in milk on a plate. Pipe blueberry cream, layer more biscuits, and repeat with white cream and blueberry syrup.
  5. Step 5: Make the White Chocolate Ganache: Heat 50 ml heavy cream until nearly boiling, add white chocolate, and stir until smooth. Let it cool.
  6. Step 6: Final Decoration: Pipe cream around the pie’s sides. Spread ganache over the center and decorate with blueberry syrup swirls. Chill for several hours or overnight.
  7. Step 7: Serve: Garnish with fresh blueberries and mint leaves before serving.
