No-Bake Lemon Poppy Seed Fridge Bites are a refreshing and healthy treat that combines the bright citrusy flavor of lemon with the satisfying crunch of poppy seeds. These easy-to-make, no-bake bites are vegan, gluten-free, and high in protein, making them a perfect snack or dessert.
Ingredients
1 cup almond flour
1/4 cup coconut flour
2 scoops preferred vanilla or unflavored protein powder
1/3 cup melted coconut oil
1/4 cup maple syrup
1/2 a lemon, juiced + the zest
1 heaping tbsp poppy seeds
Optional glaze: 3 tbsp confectioners sugar + 2 tsp coffee creamer
Instructions
- In a mixing bowl, combine the almond flour, coconut flour, protein powder, poppy seeds, and lemon zest.
- In a separate bowl, melt the coconut oil and whisk in the maple syrup until fully combined.
- Gradually fold the wet ingredients into the dry ingredients using a spatula, then mix with your hands until a firm, cookie-dough-like consistency forms.
- Press the mixture into a lined bread loaf pan or meal prep container.
- Chill the mixture in the fridge for at least 2 hours to firm up before slicing into bites.
- For the optional glaze, whisk the coffee creamer into the confectioners’ sugar until smooth, then spread over the chilled bites.
- Place the glazed bites in the freezer for about 20 minutes to set the glaze.
- Slice into 14-18 bite-sized pieces and enjoy!
Notes
- If the mixture is too wet, add more almond flour to thicken.
- The glaze is optional; the bites are sweet enough on their own.
