Description

Peanut Butter Balls with Chocolate Rice Krispies are a simple, no-bake treat combining creamy peanut butter, crunchy Rice Krispies, and a sweet chocolate topping. Perfect for parties or as a quick snack.


Ingredients

1 cup crunchy peanut butter

6 tablespoons honey

1/8 teaspoon salt

3 cups Rice Krispies cereal

1 1/2 cups vegan chocolate chips


Instructions

  1. Prepare your muffin pan by lining it with paper liners and lightly spraying with non-stick spray.
  2. In a saucepan over low heat, melt the peanut butter, honey, and salt, stirring constantly until smooth and combined.
  3. Remove from heat and add the Rice Krispies cereal, stirring to coat evenly.
  4. Spoon the mixture into the muffin liners and press down gently to form balls.
  5. In another saucepan, melt the vegan chocolate chips over low heat until smooth.
  6. Spoon the melted chocolate over each peanut butter ball, spreading it evenly.
  7. Refrigerate for 30-60 minutes to firm up.
  8. Once set, remove from the fridge, peel off the liners, and enjoy.

Notes

Substitute honey with maple syrup or agave nectar for a vegan option.

For a non-vegan version, use regular milk or dark chocolate chips.

Feel free to add mini marshmallows, dried fruit, or chopped nuts for added texture and flavor.

Store in an airtight container in the fridge for up to 1-2 weeks.
