Ingredients
2 cups fresh pineapple, chopped
4–6 habanero peppers, stemmed (seeded for less heat)
½ cup white onion, chopped
3 cloves garlic, peeled
½ cup apple cider vinegar
¼ cup water
1 tbsp lime juice
1 tbsp honey (optional)
1 tsp salt
Instructions
- In a medium saucepan over medium heat, sauté onion, garlic, and habaneros in a splash of oil for 3–4 minutes until fragrant.
- Add chopped pineapple, apple cider vinegar, water, lime juice, honey (if using), and salt.
- Bring to a gentle simmer and cook uncovered for 10–15 minutes until pineapple softens and the mixture reduces slightly.
- Transfer the mixture to a blender and blend until smooth, adding water if needed to reach desired consistency.
- Optional: Strain through a fine-mesh sieve for a smoother texture.
- Once cooled, pour into a sterilized bottle or jar and refrigerate.
Notes
- Remove habanero seeds or reduce to 3 peppers for milder heat.
- Use canned pineapple if fresh isn’t available, but drain well.
- Add brown sugar or more honey for extra sweetness.
- Try adding a chipotle pepper for a smoky flavor twist.
- Store in the fridge up to 1 month or freeze in portions for longer storage.
