Ingredients
4 stalks of rhubarb (about 4 cups)
1 apple, cored and cut into chunks
½ cup honey
2 tsp vanilla extract
¼–½ tsp cinnamon
Instructions
- Puree the apple and rhubarb until smooth in a food processor or blender.
- Pour the mixture into a pot and stir in honey, vanilla, and cinnamon.
- Bring to a boil, stirring occasionally.
- Reduce to a simmer and stir every 4–5 minutes.
- Cook for 15–20 minutes until thickened to your liking.
- Pour into a jar and let it cool before storing in the fridge.
