This Salmon, Potato, and Asparagus Sheet Pan Meal is a quick, healthy, and flavorful dinner option. Ingredients
2 salmon filets (4–6 oz each)
½ tbsp Dijon mustard
½ lb asparagus, ends trimmed
1 lb baby potatoes, quartered
3 tbsp olive oil, divided
½ tsp garlic powder
½ tsp onion powder
½ tsp paprika
Salt and pepper, to taste
Juice of 1 lemon
Instructions
- Preheat the oven to 400°F (200°C) and line a large baking sheet with parchment paper.
- In a small bowl, combine garlic powder, onion powder, paprika, salt, and pepper.
- In a large bowl, toss the quartered potatoes with 2 tablespoons olive oil and half of the seasoning mix. Spread evenly on the baking sheet.
- Roast the potatoes for 8 minutes.
- While the potatoes are roasting, brush the salmon with Dijon mustard and season with salt and pepper.
- After 8 minutes, remove the baking sheet from the oven, push potatoes to one side, and add asparagus. Place the salmon filets in the center.
- Drizzle the remaining olive oil over the salmon and asparagus. Sprinkle the remaining seasoning mix over all.
- Roast for an additional 15–20 minutes, or until the salmon flakes easily and the potatoes are tender.
- Remove from oven, drizzle lemon juice over the salmon and veggies, and serve.
