Ingredients
1 package breakfast sausage
6 large eggs
1/4 cup milk
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons butter
1 cup shredded cheddar cheese
4 large flour tortillas
Instructions
- Heat a large skillet over medium heat.
- Crumble the breakfast sausage into the skillet and cook, stirring occasionally, for 5-7 minutes until browned and fully cooked through. Transfer to a paper towel-lined plate to drain excess grease.
- In the same skillet, melt butter over medium-low heat. Whisk eggs, milk, salt, and pepper in a bowl, then pour into the skillet. Cook undisturbed for a few moments until edges set, then stir gently from the outside toward the center.
- Continue cooking until eggs are creamy and fully cooked. Remove from heat and stir in cooked sausage and shredded cheddar cheese.
- Place tortillas flat and spoon the egg, sausage, and cheese mixture onto each tortilla. Fold in sides and roll up tightly.
- Optionally, toast the roll-ups in a skillet over medium heat to crisp the tortillas.
