Ingredients
4 bone-in, skin-on chicken thighs
1 tablespoon olive oil or butter
1 onion, finely chopped
3 garlic cloves, minced
2 tablespoons all-purpose flour
2 cups chicken broth (low sodium)
½ cup heavy cream
1 teaspoon dried thyme
1 teaspoon paprika
Salt and pepper to taste
1 cup long-grain white rice
2 cups water or chicken broth
Pinch of salt
Instructions
- Season chicken thighs with salt, pepper, paprika, and thyme.
- Heat oil in a large skillet over medium-high heat. Sear chicken skin-side down for 5–6 minutes, flip, and cook for another 4–5 minutes. Remove from skillet and set aside.
- In the same skillet, sauté chopped onion until translucent. Add minced garlic and cook for 30 seconds more.
- Stir in flour and cook for 1 minute, then slowly whisk in chicken broth and heavy cream. Simmer until the gravy thickens. Adjust seasoning to taste.
- Return chicken to skillet. Cover and cook on low for 10–12 minutes, or until chicken is cooked through.
- In a separate pot, bring water or broth with a pinch of salt to a boil. Add rice, cover, and cook on low for about 15 minutes until tender.
- Serve rice in bowls, topped with smothered chicken and generous spoonfuls of gravy.
