Scottish Tablet is a rich, sweet confection made from sugar, butter, milk, and sweetened condensed milk. It has a crumbly texture and is flavored with vanilla or whiskey, making it a traditional Scottish treat that’s perfect for sharing.
Ingredients
4 1/2 cups granulated white sugar
1 cup whole milk
1 (14 oz) can sweetened condensed milk
6 tablespoons salted butter
Instructions
- Prepare the Pan: Lightly grease a 9×13-inch baking pan and line with parchment paper. Use a smaller pan for thicker pieces.
- Melt Initial Ingredients: In a microwave-safe bowl, combine sugar, milk, and butter. Heat in 30-second bursts, stirring in between until melted.
- Cook the Mixture: Transfer to a saucepan over medium-high heat. Bring to a boil, reduce heat to medium, and stir in sweetened condensed milk. Be cautious as the mixture will expand.
- Simmer and Thicken: Let it bubble gently for 15–20 minutes, stirring frequently, until it thickens and turns a caramel color. The temperature should reach 240°F–248°F, or form a soft ball in cold water.
- Optional Flavoring: Remove from heat and stir in vanilla extract or whiskey for flavor.
- Beat the Mixture: Using a hand mixer or wooden spoon, beat for 8–10 minutes until it thickens and begins to lose its shine. Stop when trails are visible.
- Set the Tablet: Pour the mixture into the prepared pan and smooth it out. After 10 minutes, lightly score the top to ease cutting later.
- Cool and Slice: Let the tablet cool for 2–4 hours (or overnight). Once set, cut into pieces along the scored lines.
Notes
For added flavor, try substituting vanilla with almond extract, orange zest, or a pinch of cinnamon.
Fold in chopped nuts like pecans or walnuts for a crunchy texture.
For a chocolate version, drizzle melted chocolate over the top or mix cocoa powder into the mixture.
Store in an airtight container for up to two weeks, or refrigerate for a month.
If the tablet is too soft, cook it longer to reach the proper temperature.
