Description

Ingredients

2 salmon fillets, thick and center-cut

8 large shrimp, peeled and deveined

1/2 cup shrimp, chopped

2 tablespoons cream cheese

1 tablespoon mayonnaise

1/2 teaspoon garlic, minced

1 tablespoon fresh parsley, chopped

1 teaspoon lemon juice

2 tablespoons butter

Salt and pepper to taste


Instructions

  1. In a bowl, mix the chopped shrimp, cream cheese, mayonnaise, minced garlic, parsley, and lemon juice. Season with salt and pepper to taste.
  2. Cut a slit in the salmon fillets to create a pocket for the shrimp mixture.
  3. Stuff the shrimp mixture generously inside the salmon fillets.
  4. In a skillet, heat butter over medium heat. Sear the salmon fillets for 4-5 minutes on each side, or until golden brown and cooked through.
  5. In the same skillet, add the remaining whole shrimp and cook for 1-2 minutes, or until they turn pink.
  6. Place the cooked salmon fillets on a plate. Top with the seared shrimp and spoon any extra sauce from the pan over the top.
  7. Serve with lemon wedges for a fresh squeeze and extra garlic butter sauce for dipping.
