Description

This Slow Cooker Peanut Chicken is a rich, Thai-inspired dish featuring tender chicken in a creamy, flavorful peanut sauce. Ingredients

lbs boneless, skinless chicken breasts

1 red bell pepper, diced

½ large yellow onion, diced

2 cloves garlic, minced

⅔ cup creamy peanut butter

1 cup chicken broth

⅓ cup low-sodium soy sauce

1 teaspoon sugar

1 tablespoon lime juice

½ cup chopped fresh cilantro

Lime wedges, for serving

Cooked rice or noodles, for serving

Chopped peanuts, for garnish


Instructions

  1. Place the diced onion, garlic, and red bell pepper at the bottom of the slow cooker.
  2. Add the chicken breasts on top of the vegetables.
  3. In a medium bowl, whisk together peanut butter, chicken broth, soy sauce, sugar, and lime juice until smooth.
  4. Pour the peanut sauce over the chicken in the slow cooker.
  5. Cover and cook on LOW for 4–5 hours, or until the chicken is tender and easily shreds.
  6. Remove the chicken from the slow cooker and shred using two forks.
  7. Return the shredded chicken to the slow cooker and stir to combine with the sauce.
  8. Stir in the lime juice and chopped cilantro.
  9. Serve the peanut chicken over rice or noodles, garnished with additional cilantro, lime wedges, and chopped peanuts.
