Description
Smashed Carrots are a flavorful and creamy twist on a classic side dish. With the sweetness of honey, richness of butter, and a touch of garlic powder, this simple recipe transforms carrots into a delightful dish that will impress any crowd.
Ingredients
2 pounds of carrots, peeled and cut into chunks
4 tablespoons of unsalted butter
2 tablespoons of honey
1 teaspoon of salt
1/2 teaspoon of black pepper
1/4 teaspoon of garlic powder
2 tablespoons of fresh parsley, chopped (for garnish)
Instructions
- Place the carrot chunks in a large pot and cover with water. Bring to a boil over high heat, then reduce to medium heat and simmer for 15-20 minutes until fork-tender.
- Drain the carrots and return them to the pot to remove excess water.
- Add butter, honey, salt, black pepper, and garlic powder to the drained carrots. Stir until well combined and the butter melts.
- Using a potato masher or fork, smash the carrots to your desired consistency, leaving some chunks or making them smooth.
- Taste and adjust seasoning as needed. Add more salt or honey, or a pinch of cayenne pepper for extra flavor.
- Transfer the mashed carrots to a serving dish, garnish with chopped parsley, and serve.
Notes
- For a spicy version, add cayenne pepper or red pepper flakes.
- Substitute honey with maple syrup for a different flavor.
- Incorporate fresh herbs like thyme or rosemary for added fragrance.
- For a vegan version, swap the butter for olive oil or vegan butter.
- For a cheesy twist, add grated Parmesan or cheddar cheese.
- Store leftovers in an airtight container in the refrigerator for up to 3 days. Can be frozen for up to 3 months.
