Description

Smashed Carrots are a flavorful and creamy twist on a classic side dish. With the sweetness of honey, richness of butter, and a touch of garlic powder, this simple recipe transforms carrots into a delightful dish that will impress any crowd.


Ingredients

2 pounds of carrots, peeled and cut into chunks

4 tablespoons of unsalted butter

2 tablespoons of honey

1 teaspoon of salt

1/2 teaspoon of black pepper

1/4 teaspoon of garlic powder

2 tablespoons of fresh parsley, chopped (for garnish)


Instructions

  1. Place the carrot chunks in a large pot and cover with water. Bring to a boil over high heat, then reduce to medium heat and simmer for 15-20 minutes until fork-tender.
  2. Drain the carrots and return them to the pot to remove excess water.
  3. Add butter, honey, salt, black pepper, and garlic powder to the drained carrots. Stir until well combined and the butter melts.
  4. Using a potato masher or fork, smash the carrots to your desired consistency, leaving some chunks or making them smooth.
  5. Taste and adjust seasoning as needed. Add more salt or honey, or a pinch of cayenne pepper for extra flavor.
  6. Transfer the mashed carrots to a serving dish, garnish with chopped parsley, and serve.
