Description

This Spinach and Feta Omelet is a quick, nutritious breakfast packed with protein, fiber, and vitamins. With its savory flavor and creamy feta, it’s the perfect choice for a healthy and satisfying start to your day.


Ingredients

2 large eggs

¼ teaspoon oregano

¼ teaspoon garlic powder

Salt to taste

½ tablespoon butter, divided

½ cup baby spinach

¼ cup crumbled feta cheese


Instructions

  1. In a small bowl, beat together eggs, oregano, garlic powder, and salt.
  2. Melt ¼ tablespoon of butter in a small 9” nonstick skillet over medium heat. Add spinach and toss for 1-2 minutes until wilted. Transfer to a small plate.
  3. Return the skillet to the burner, add the remaining butter, and swirl to coat the bottom of the skillet.
  4. Pour the egg mixture into the skillet. Cover with a lid and cook for 1-2 minutes, until the eggs are almost set.
  5. Sprinkle the spinach and feta on one side of the omelet, cover, and cook for another minute until the eggs are no longer runny. Fold the omelet in half and slide it onto a plate.

Notes

  • For extra flavor and texture, add vegetables like mushrooms, onions, or bell peppers.
  • For a dairy-free version, skip the feta or use a dairy-free cheese alternative.
  • Customize the flavor with herbs like basil, thyme, or dill, or add some red pepper flakes for a bit of spice.
