Ingredients

Cookie Dough:

⅓ cup granulated sugar

1 egg yolk

½ cup crushed graham crackers

1¾ cups all-purpose flour

½ tsp baking powder

¼ tsp baking soda

½ tsp salt

Cream Cheese Filling:

8 oz cream cheese, room temperature

⅔ cup heavy whipping cream, chilled

¼ cup granulated sugar

½ tsp vanilla extract

Pinch of salt

12 tbsp lemon juice (optional)

Strawberry Glaze:

3 tbsp strawberry jam

2 tbsp water

½ tbsp sugar

1 tsp cornstarch


Instructions

  1. Prepare the Cookie Dough:
  2. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  3. Cream together butter, granulated sugar, and brown sugar until fluffy.
  4. Add egg, egg yolk, and vanilla extract; mix until combined.
  5. In a separate bowl, whisk flour, graham cracker crumbs, baking powder, baking soda, and salt.
  6. Gradually mix dry ingredients into the wet mixture. Chill dough for at least 30 minutes.
  7. Prepare the Cream Cheese Filling:
  8. Beat together cream cheese, whipping cream, granulated sugar, vanilla, and salt until smooth.
  9. Optional: Add lemon juice for a tangy flavor.
  10. Roll cream cheese mixture into small balls and freeze for 1 hour.
  11. Assemble the Cookies:
  12. Preheat oven to 350°F (175°C).
  13. Scoop cookie dough, flatten slightly, and place a frozen cream cheese ball in the center. Mold dough around the filling, sealing it.
  14. Place cookie dough balls on the baking sheet, 2 inches apart.
