Description

Strawberry Lemon Blondies are a refreshing twist on the classic blondie, featuring a delightful combination of sweet strawberries and tangy lemon. These bars are soft, chewy, and full of vibrant flavor, making them a perfect treat for any occasion.


Ingredients

1 cup unsalted butter, at room temperature

3/4 cup granulated sugar

1 large egg

1/4 cup fresh squeezed lemon juice

2 1/4 cups all-purpose flour

1/2 teaspoon baking powder

1/2 teaspoon salt

1 cup diced fresh strawberries

1 cup powdered sugar, sifted

1 tablespoon strawberry puree (from about 2 large strawberries)

1 tablespoon lemon juice


Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9-inch square baking pan with parchment paper, allowing some overhang for easy removal.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the egg and lemon juice, mixing until fully incorporated.
  3. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  4. Gently fold the diced strawberries into the batter, being careful not to overmix.
  5. Spread the batter evenly into the prepared pan. Bake for 30–35 minutes, or until the edges are golden and a toothpick inserted into the center comes out clean.
  6. Allow the blondies to cool completely in the pan on a wire rack. Once cooled, lift them out using the parchment paper overhang. For the glaze, whisk together the powdered sugar, strawberry puree, and lemon juice until smooth. Drizzle the glaze over the top of the blondies.

Notes

  • For a mixed berry version, substitute or combine strawberries with raspberries or blueberries.
  • To make these blondies gluten-free, substitute the all-purpose flour with a gluten-free flour blend.
