Description

Strawberry mochi is a delicious Japanese dessert that combines the chewy texture of glutinous rice flour with a creamy strawberry filling. These homemade treats are fresh, flavorful, and surprisingly easy to make, perfect for any occasion or as a sweet snack.


Ingredients

100g glutinous rice flour

30g cornstarch

35g sugar

180ml milk

23 drops strawberry food coloring (optional)

15g butter

150ml non-dairy whipping cream

50ml dairy whipping cream

12 tbsp condensed milk

3 tbsp strawberry puree


Instructions

  1. In a microwave-safe bowl, combine the glutinous rice flour, cornstarch, sugar, milk, and strawberry food coloring. Stir until the mixture is fully combined.
  2. Cover the bowl with plastic wrap and steam it in the microwave for 20 minutes, or until the dough becomes translucent.
  3. Once the dough is steamed, add the butter and mix it in until well combined.
  4. Knead the dough until it’s soft and stretchy. Let it cool for about 45 minutes.
  5. In a separate mixing bowl, combine the non-dairy whipping cream, dairy whipping cream, condensed milk, and strawberry puree. Use a hand mixer to whip the mixture until it forms stiff peaks.
  6. Dust your working surface and the dough with more glutinous rice flour to prevent sticking.
  7. Flatten the dough into small circular shapes. Place a spoonful of the strawberry filling in the center of each piece and pinch the edges of the dough to seal it, creating little mochi balls.
  8. Tap the bottom of the mochi with more glutinous rice flour to remove any excess moisture.
  9. Gently brush off any extra flour from the mochi before serving.
  10. Once assembled, your strawberry mochi is ready to be enjoyed. Serve these delicious treats as a sweet snack or dessert.

Notes

For a vegan version, use only non-dairy whipping cream and substitute the butter with a plant-based alternative.

Try experimenting with different fruit purees like mango or matcha for unique flavors.

If you prefer chocolate, swap the strawberry filling for a rich chocolate ganache.
