Ingredients
1 (1 pound) sweet potato
1/2 cup butter, softened
1 cup white sugar
1/2 cup milk
2 eggs

1 (9 inch) unbaked pie crust
Instructions
- Boil the sweet potato whole in its skin for 40 to 50 minutes, or until tender. Once done, run cold water over the sweet potato to cool it down, and remove the skin.
- Mash the sweet potato in a bowl. Add the softened butter and mix well using a mixer.
- Stir in the white sugar, milk, eggs, ground nutmeg, ground cinnamon, and vanilla extract. Beat on medium speed until the mixture is smooth.
- Pour the sweet potato filling into an unbaked pie crust.
- Preheat your oven to 350°F (175°C). Place the pie in the oven and bake for 55 to 60 minutes, or until a knife inserted into the center of the pie comes out clean.
- The pie will puff up like a soufflé during baking and will settle as it cools.
- Allow the pie to cool before slicing and serving. This ensures the filling sets properly.
