1 packet taco seasoning
½ cup water
9 lasagna noodles
1 cup refried beans
1 cup salsa
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
½ cup sour cream
¼ cup chopped green onions
¼ cup sliced black olives
½ cup diced tomatoes

- Preheat oven to 375°F (190°C).
- In a skillet over medium heat, brown the ground beef. Drain excess grease.
- Stir in taco seasoning and water. Simmer for 5 minutes.
- Boil lasagna noodles until al dente. Drain and set aside.
- Spread a small amount of salsa in the bottom of a baking dish.
- Layer 3 noodles, then spread half the refried beans, half the beef, a third of the salsa, and a third of both cheeses.
- Repeat layers with noodles, remaining beans, beef, salsa, and cheese.
- Top with last layer of noodles, spread sour cream over the top, and finish with remaining cheese.
- Cover with foil and bake for 25 minutes. Remove foil and bake an additional 10 minutes until bubbly.
- Let rest for 5–10 minutes. Garnish with green onions, olives, and tomatoes before serving.
Notes
- Swap ground beef with ground turkey or chicken for a lighter version.
- Add a layer of corn or bell peppers for extra flavor and texture.
- Can be made ahead and refrigerated before baking.
