Ingredients
For the Caramelized Apples: 6 Golden apples (or Reine des Reinettes), 30 g butter, 50 g sugar
For the Caramel: 100 g sugar, 2 tbsp water, 30 g butter
For the Custard: 3 eggs, 50 g sugar, 20 cl milk, 1 pinch of salt
Instructions
- Prepare the Apples: Peel and slice the apples into thin slices. In a skillet, melt butter, then add sugar and let it caramelize. Add the apples and cook for 10-15 minutes until golden and tender.
- Make the Caramel: In a separate pan, heat sugar and water over medium heat without stirring. Once golden, remove from heat and add butter. Stir until smooth.
- Assemble the Terrine: Line a loaf pan with parchment paper. Layer caramelized apples and drizzle caramel over them. Repeat until the pan is filled.
- Prepare the Custard: Whisk eggs and sugar, then add milk and a pinch of salt. Pour the mixture over the apples in the loaf pan.
- Bake: Bake at 180°C (350°F) for 30 minutes. Let the terrine cool before removing it from the pan.
Notes
- For a vegan version, use flax eggs and plant-based milk/butter alternatives.
- You can substitute apples with pears or peaches for a different flavor.
