Description

This hearty and comforting Lasagna Soup combines all the flavors of classic lasagna into a delicious, spoonable dish. Packed with savory ground beef, tender noodles, tangy marinara sauce, and melty cheeses, it’s an instant family favorite for chilly nights.


Ingredients

1 lb ground beef

1 onion, chopped

3 cloves garlic, minced

2 cups marinara sauce

6 cups chicken broth

1 tsp dried basil

1 tsp dried oregano

½ tsp salt

¼ tsp black pepper

8 oz lasagna noodles, broken into pieces

1 cup shredded mozzarella cheese

½ cup shredded parmesan cheese, plus extra for garnish

¼ cup chopped fresh parsley, for garnish


Instructions

  1. In a large pot, brown the ground beef over medium-high heat. Drain excess fat. Add chopped onion and sauté until translucent. Add garlic and cook for another minute.
  2. Stir in marinara sauce, chicken broth, basil, oregano, salt, and pepper. Bring the mixture to a boil, then reduce heat to low and simmer for 20 minutes.
  3. Add broken lasagna noodles to the pot, cooking for about 8–10 minutes, until tender.
  4. Stir in shredded mozzarella and parmesan cheeses until melted and creamy.
  5. Adjust seasoning to taste. Serve hot, garnished with fresh parsley and additional parmesan cheese.
