Description

The Ultimate Summer Chocolate Overload Layer Cake is a chocolate lover’s dream, featuring moist chocolate cake layers, silky frosting, decadent ganache, and topped with chunks of chocolate bars. Perfect for any celebration or indulgent treat.

Ingredients

For the Cake:

2 cups all-purpose flour

2 cups granulated sugar

3/4 cup unsweetened cocoa powder

2 tsp baking soda

1 tsp baking powder

1 tsp salt

1 cup buttermilk

1 cup hot coffee

1/2 cup vegetable oil

2 large eggs

2 tsp vanilla extract

For the Frosting & Topping:

1 cup unsalted butter (softened)

3 cups powdered sugar

1 cup cocoa powder

1/2 cup heavy cream

1 tsp vanilla extract

1/2 cup chocolate ganache (for drip)

Chopped chocolate bars (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line 4 round cake pans.
  2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt.
  3. Add the buttermilk, vegetable oil, eggs, and vanilla extract. Mix well before gradually adding the hot coffee. The batter will be thin, but that’s fine!
  4. Pour the batter evenly into the prepared pans and bake for 25–30 minutes, or until a toothpick inserted comes out clean.
  5. Allow the cakes to cool completely before frosting.
  6. To make the frosting, beat together the butter, powdered sugar, cocoa powder, heavy cream, and vanilla extract until smooth and creamy.
  7. Once cooled, stack the cakes, spreading frosting between each layer. Frost the entire cake.
  8. Drizzle the chocolate ganache down the sides for an indulgent drip effect.
  9. Top with chopped chocolate bars for extra texture and chocolatey goodness.
  10. Chill the cake in the refrigerator before slicing to allow the ganache to set.

Notes

  • For added texture, try adding fruit like sliced strawberries or raspberries between the layers.
  • For a nuttier version, sprinkle chopped walnuts or pecans on top or between layers.
  • Enhance the coffee flavor with a shot of espresso in the batter or frosting for a richer depth.
  • Store in an airtight container in the fridge for up to 4-5 days. Reheat a slice for 10-15 seconds if you prefer it warm.
